Traditional Ukraine girls love to cook. They learn the art at their mothers knee, the same recipes handed down by their grandmother and great grandmother. Actually, Ukrainian cuisine developed over centuries and cooks in the Ukraine take great pride in serving home made recipes. Cooking is an essential element in Ukrainian heritage.

Breakfast is a traditional meal when served by Ukrainian women. They do not rely on microwaves or drive through windows at a fast food restaurant or approve of people running off to work with a banana in their briefcase. Breakfasts are served at home, with hot rolls, topped by an unsweetened berry sauce. Egg salad made with fresh dill, pickled herring in sour cream and melt in your mouth coleslaw follow. Strong coffee, freshly brewed, is a must.

In the summer, Ukrainians take advantage of all the fresh produce to serve their famous beet soup for guests to lunch. Ukrainian cooks search out the freshest vegetables either at the markets or farmer stands by the road. Possibly because the Ukraine, though just a bit smaller than the state of Texas, is mostly farmland of grains and vegetables, cooks value fresh ingredients. A Ukrainian cook may follow the soup with an Olivier salad made from potatoes, pickles, hard boiled eggs, chopped onions and chicken.

For snacks, Ukrainians nibble on dark breads with a thin slice of salo, a type of unrendered pork fat that is pretty much unknown in the west, but popular in Russian, the Ukraine and Poland. Home made cheeses, fruit tarts or spicy sausages fresh from the butcher appear as midday treats. Paired with a great roll, this holds them over until dinner.

Ukraine hospitality is not complete without many home prepared dishes. Tables groan under the weight of the platters. It is the joy of the Ukrainians, as a people, to share their homes with family, friends and special guests. If you are invited for dinner, it is common to bring a small present for the host. A bottle of wine or bunch of flowers may be most welcome and get the evening off to a good start.

It is a welcome attitude of guests, particularly foreigners, to try every dish. Borscht almost certainly will be served and the cook may be anxious to hear your opinion. Sauerkraut, cheese or potato dumplings, stewed meats may also be served with pride. Alcohol will very likely be poured for Ukrainians love to make toasts and to be toasted in return. It’s a good idea to think of yours in advance.

Just when you think your belt is going to pop, after dinner sweets arrive. This may include torte, sweet fried dough tossed in cinnamon or fried curd fritters. These are traditional Ukrainian dishes that you don’t want to miss.

Ukraine girls are proud of their cooking and love to host lavish dinner parties. It is not really the food that is the most important thing, however, it is the companionship of friends and family gathered around the table that warms the heart of the traditional Ukrainian cook. And, of course, they reserve many special recipes for high holidays like Christmas and Easter when baking becomes an extra special task for the Ukrainian cook.
